Bradford Shovlin (BA ’03, Liberal Arts and Sciences) has been cooking up a storm, and has been making his way up the ranks in fine dining restaurants throughout the Midwest. Shovlin has worked in the kitchens of North Pond and Crofton on Wells in Chicago, and was recently the executive chef at two start-up restaurants in Seattle and Chicago. 

While Shovlin was working at Crofton on Wells, the restaurant received a Michelin Star; a prestigious award bestowed on only the highest quality fine dining restaurants.

The Michelin Star is awarded by the Michelin company (yes, that Michelin!) on the basis of anonymous inspections that take into account the quality, mastery of technique, personality, and consistency of the food. Michelin began honoring restaurants with this award in 1900 to encourage people to travel—hence the connection between vehicle tires, and restaurants. 

Shovlin is now the executive chef for the Iron Horse Hotel in Milwaukee. In mid-May, he gave guests of Smyth, a restaurant located in the Iron Horse Hotel, a chance to enjoy his award winning food by presenting a five course wine dinner with locally grown ingredients. The dinner highlighted Wisconsin’s seasonal greenery.
