Ingredients:
- 4-5 medium sized russet potatoes
- Salt and pepper to taste
- 1lb ground beef
- 2 cans green beans, drained
- 1 can sweetcorn, drained
- 1/2 cup milk
- 4 oz. cheddar cheese
Instructions:
- Preheat oven to 350°F.
- Bring 6 quarts of water to a boil in a large pot, and generously season water with salt.
- Peel and cut potatoes into 2 inch cubes.
- Once water comes to a boil, add the potatoes. Cook until potatoes have softened, about 15 to 20 minutes. Test the potatoes by poking with a fork to check that they are done (there should be little to no resistance).Remove from heat and let sit.
- While the potatoes are cooking, brown the ground beef in a skillet until cooked through and no pink remains.
- Drain the grease from the cooked ground beef and put it in a 9x9 baking dish.
- Add the drained green beans and corn to the baking dish and gently stir the ingredients together. Season with salt and pepper.
- Drain the potatoes and return them to the pot, adding half of the milk. Mash the potatoes until desired consistency, adding more milk if needed. Add salt to taste.
- Smooth the mashed potatoes over the top of the beef mixture and sprinkle on the cheese.
- Bake at at 350°F for 45 minutes or until lightly golden on top.
- Let cool for 5 to 10 minutes and enjoy!
