Shepherd's Pie

Perfect for anyone on a budget! - submitted by Sarah Carpenter

Ingredients:
  • 4-5 medium sized russet potatoes
  • Salt and pepper to taste
  • 1lb ground beef
  • 2 cans green beans, drained
  • 1 can sweetcorn, drained
  • 1/2 cup milk
  • 4 oz. cheddar cheese

 

Instructions:
  1. Preheat oven to 350°F.
  2. Bring 6 quarts of water to a boil in a large pot, and generously season water with salt. 
  3. Peel and cut potatoes into 2 inch cubes.
  4. Once water comes to a boil, add the potatoes. Cook until potatoes have softened, about 15 to 20 minutes. Test the potatoes by poking with a fork to check that they are done (there should be little to no resistance).Remove from heat and let sit.
  5. While the potatoes are cooking, brown the ground beef in a skillet until cooked through and no pink remains. 
  6. Drain the grease from the cooked ground beef and put it in a 9x9 baking dish.
  7. Add the drained green beans and corn to the baking dish and gently stir the ingredients together. Season with salt and pepper. 
  8. Drain the potatoes and return them to the pot, adding half of the milk. Mash the potatoes until desired consistency, adding more milk if needed. Add salt to taste.
  9. Smooth the mashed potatoes over the top of the beef mixture and sprinkle on the cheese. 
  10. Bake at at 350°F for 45 minutes or until lightly golden on top. 
  11. Let cool for 5 to 10 minutes and enjoy!
