Spicy Cajun Pasta

A quick and easy weeknight meal. This is a family favorite! - submitted by Candy McCorkel, Ph.D.

Ingredients:
  • 1 lb of smoked sausage or andouille sausage 
  • 1 lb of penne pasta 
  • 2 tsp. of Cajun Seasoning 
  • 2 tbsp. Dried Parsley
  • 2-4 tsp. Tabasco Sauce or Franks Red Hot  
  • 1-15 oz jar of Alfredo sauce

 

Instructions:
  1. Cook pasta according to the package directions; drain and return to pot.
  2. Cut sausage into quarters and place in a bowl, toss with Cajun seasoning.
  3. Brown sausage in a heated skillet (preferably cast iron) on medium high heat.
  4. Stir in Alfredo sauce, parsley and Tabasco sauce, bring to a boil.
  5. Reduce heat to a simmer cover and cook for 5 minutes.
  6. Add sausage mixture to cooked pasta, stir well.
  7. Serve with a baguette or skillet cornbread.

  1. Toast two pieces of bread, any kind you like!  
  2. Spread on some butter. 
  3. Sprinkle on garlic powder, garlic salt, or both!
