A quick and easy weeknight meal. This is a family favorite! - submitted by Candy McCorkel, Ph.D.
Ingredients:
- 1 lb of smoked sausage or andouille sausage
- 1 lb of penne pasta
- 2 tsp. of Cajun Seasoning
- 2 tbsp. Dried Parsley
- 2-4 tsp. Tabasco Sauce or Franks Red Hot
- 1-15 oz jar of Alfredo sauce
Instructions:
- Cook pasta according to the package directions; drain and return to pot.
- Cut sausage into quarters and place in a bowl, toss with Cajun seasoning.
- Brown sausage in a heated skillet (preferably cast iron) on medium high heat.
- Stir in Alfredo sauce, parsley and Tabasco sauce, bring to a boil.
- Reduce heat to a simmer cover and cook for 5 minutes.
- Add sausage mixture to cooked pasta, stir well.
- Serve with a baguette or skillet cornbread.

- Spread on some butter.
- Sprinkle on garlic powder, garlic salt, or both!
