Protein + Veggie Bowl

A quick and healthy meal! - submitted by Pam Kammer

Ingredients:
  • 1 tbsp. coconut, avocado, or extra virgin olive oil 
  • 1/2 bunch of asparagus, washed and cut into one-inch pieces
  • 1/2 cup mushrooms, sliced
  • 1/2 cup your choice of cooked cubed/chopped steak, chicken, lamb, tofu, seafood, or black beans
  • Your favorite spice combination: salt, black pepper, red pepper, garlic – whatever you love!
  • 1-2 eggs
  • 1/2 avocado
  • 2 cups power greens or spinach and arugula mix
  • Splash of balsamic vinegar or coconut amino acids

 

Instructions:
  1. Heat oil in saute pan on medium-high heat.
  2. Once the oil is hot, add the asparagus and saute for one minute, then add the mushrooms, cook for another minute. Add meat or beans, and heat thoroughly. Splash with vinegar or amino acid.
  3. Make a space in the middle of the pan and add the egg(s). Cook until the yolks are done to your liking. 
  4. Chop up the power greens and place in a serving bowl. Transfer the ingredients from the pan to the bed of greens.
