Burger Ingredients:
- 1 flax egg (1 tbs. flaxseed meal + 3 tablespoons water)
- 1 tsp. olive oil
- 1/2 red onion, finely diced
- 2-3 cloves garlic, minced
- 1 large carrot, shredded
- 1 15 oz can black beans, rinsed and drained
- 1/4 -1/3 cup oat flour, gluten free if desired
- 1 tsp. cumin
- 1/2 tsp. garlic powder
- 1 tsp. chili powder
- 1/2 tsp. paprika
- 1/2 tsp. salt
- Freshly ground black pepper
Garlic Tahini Sauce Ingredients:
- 2 tbs. tahini
2 cloves garlic, finely minced
1 tbs.fresh lemon juice
1-2 tbs. warm water, to thin
1/4 tsp. salt
For serving (optional):
- 4 sprouted/whole grain or gluten free buns
- 1 avocado, sliced
- Slices of red onion
- Tomato slices
Instructions:
- Make the burgers: Start with mixing the flaxseed meal and water in a small bowl, cool in the fridge for 5 minutes.
- Heat 1 tsp. olive oil over medium heat. Saute the onion, garlic and carrot for 5 minutes or until onions are translucent and carrots begin to soften.
- Transfer this cooked mixture to a large bowl and stir in the cumin, garlic powder, chili powder, paprika, salt and pepper.
- Using a food processor or high powered blender, blend black beans until well roughly blended (leave some texture), and then add to the bowl full of veggies and spices. Stir in the flax, egg and oat flour.
- Taste and add additional salt, pepper or spices as you see fit.
- Divide into 4 patties. Put on a plate and cover with plastic wrap, place in the fridge to cool for 30 minutes.
- Make the sauce: While the burgers are in the fridge, whip up the the garlic tahini sauce by mixing the tahini, garlic, lemon juice, water and salt in a small bowl.
- Once patties are cooled, generously spray a large skillet with nonstick cooking spray and place over medium heat. Add the patties and cook 4-5 minutes on each side, or until golden brown and heated through.
- Get your buns ready! While the burgers cook, assemble the buns. Place tomato, avocado, red onion and tahini sauce on the buns. Serve with sweet potato fries or a salad.
