Cake Ingredients:
- 3 large ripe bananas (about 1 and 1/2 cups mashed)
- 3 cups all-purpose flour
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. ground cinnamon
- 1/2 tsp. salt
- 3/4 cup unsalted butter, softened to room temperature
- 1 cup granulated sugar
- 1/2 cup packed light or dark brown sugar
- 3 large eggs, at room temperature
- 2 teaspoons pure vanilla extract
- 1 1/2 cups buttermilk, at room temperature
Cream Cheese Frosting Ingredients:
- 8 oz cream cheese
- 1 stick butter
- 1 tsp. vanilla extract
- 3 cups powdered sugar
- 1/8 tsp. salt
Instructions:
- Preheat oven to 250°F and grease a 9x13 inch pan.
- Using a mixer or fork, mash the bananas and set them aside.
- Whisk the flour, baking powder, baking soda, cinnamon, and salt together. Set aside.
- Using a mixer, beat the butter on high speed until smooth and creamy, about one minute.
- Add the eggs and the vanilla to the butter, and beat on medium speed until combined.
- Beat in the mashed bananas, scraping the sides as needed.
- With the mixer on low, combine the dry ingredients in thirds while alternating buttermilk. Mix until just incorporated, lumps are o.k.! Do not over mix.
- Spread batter into the pan and bake for 45-50 minutes. Keep an eye on it, as baking times may vary. Insert a toothpick into the center of the cake, if it comes out clean, the cake is done.
- Remove cake from the oven and allow to cool completely. Set in the refrigerator to speed things up.
- While the cake is cooling make the frosting. In a large bowl, beat the cream cheese and butter together with a mixer on high speed until smooth and creamy. Add the confectioners sugar, vanilla, and salt. Beat on low speed for 30 seconds, then switch to high speed for 2 minutes. Add more sugar for thicker frosting.
- Frost the cake and enjoy!
