Banana Cake with Brown Butter Cream Cheese Frosting

Cake Ingredients:
  • 3 large ripe bananas (about 1 and 1/2 cups mashed)
  • 3 cups all-purpose flour
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. ground cinnamon
  • 1/2 tsp. salt
  • 3/4 cup unsalted butter, softened to room temperature
  • 1 cup granulated sugar
  • 1/2 cup packed light or dark brown sugar
  • 3 large eggs, at room temperature
  • 2 teaspoons pure vanilla extract
  • 1 1/2 cups buttermilk, at room temperature

 

Cream Cheese Frosting Ingredients:
  • 8 oz cream cheese
  • 1 stick butter 
  • 1 tsp. vanilla extract 
  • 3 cups powdered sugar
  • 1/8 tsp. salt

 

Instructions:
  1. Preheat oven to 250°F and grease a 9x13 inch pan.
  2. Using a mixer or fork, mash the bananas and set them aside.
  3. Whisk the flour, baking powder, baking soda, cinnamon, and salt together. Set aside.
  4. Using a mixer, beat the butter on high speed until smooth and creamy, about one minute. 
  5. Add the eggs and the vanilla to the butter, and beat on medium speed until combined. 
  6. Beat in the mashed bananas, scraping the sides as needed. 
  7. With the mixer on low, combine the dry ingredients in thirds while alternating buttermilk. Mix until just incorporated, lumps are o.k.! Do not over mix. 
  8. Spread batter into the pan and bake for 45-50 minutes. Keep an eye on it, as baking times may vary. Insert a toothpick into the center of the cake, if it comes out clean, the cake is done. 
  9. Remove cake from the oven and allow to cool completely. Set in the refrigerator to speed things up.
  10. While the cake is cooling make the frosting. In a large bowl, beat the cream cheese and butter together with a mixer on high speed until smooth and creamy. Add the confectioners sugar, vanilla, and salt. Beat on low speed for 30 seconds, then switch to high speed for 2 minutes. Add more sugar for thicker frosting. 
  11. Frost the cake and enjoy!
