Creamy Three Cheese Bruschetta

A family favorite! - submitted by Valorie Reid, adapted from Yellow Bliss Road.

Ingredients:
  • 1 baguette French bread or similar – cut into 1/4 inch slices
  • Pam olive oil spray
  • 4 oz cream cheese – softened
  • 4 oz goat cheese
  • 1/4 cup grated Parmesan cheese
  • 2 cloves minced garlic
  • 6 ripe Roma tomatoes, diced and seeds removed
  • 3 tsp. olive oil
  • 1 tsp. balsamic vinegar
  • 6-8 basil leaves, chopped, plus some for garnish
  • Salt and pepper to taste
  • 2-3 tbs. bottled balsamic glaze

 

Instructions:
  1. Preheat oven to 400°F.
  2. Cover large baking sheet with foil and arrange baguette slices on the foil. Spray both sides with olive oil spray.
  3. In a small bowl, combine cheeses and set aside.
  4. In a medium sized bowl, stir together tomatoes, minced garlic, olive oil, balsamic vinegar and chopped basil.  Season with salt and pepper.
  5. Put baguettes in oven until slightly warm and toasty, then flip and repeat until reverse side is lightly golden. 
  6. Remove from oven and immediately spread cheese on each baguette. Top with the tomato mixture and drizzle with balsamic glaze. Top with remaining chopped basil for garnish.
