Ingredients:
- 1/3 cup olive oil
- 2 tbs. white wine vinegar
- 3 tbs. Dijon mustard
- 2 lbs pre-packaged gnocchi, cooked per manufacturer's instructions and cooled.
- 4 celery stalks, diced
- 1/2 of a red onion, diced
- Salt and pepper to taste
Instructions:
- In a small bowl, whisk together the olive oil, white wine vinegar, and dijon mustard.
- Pour the mixture over the prepared gnocchi, add the celery and red onion, and season with salt and pepper.
- Gently stir the ingredients together until well incorporated and serve!
- Tip: Make a day ahead and store in the fridge over night for a richer flavor!
