Gnocchi Potato Salad

Ingredients:
  • 1/3 cup olive oil
  • 2 tbs. white wine vinegar
  • 3 tbs. Dijon mustard
  • 2 lbs pre-packaged gnocchi, cooked per manufacturer's instructions and cooled. 
  • 4 celery stalks, diced
  • 1/2 of a red onion, diced
  • Salt and pepper to taste

 

Instructions:
  1. In a small bowl, whisk together the olive oil, white wine vinegar, and dijon mustard.
  2. Pour the mixture over the prepared gnocchi, add the celery and red onion, and season with salt and pepper. 
  3. Gently stir the ingredients together until well incorporated and serve! 
  4. Tip: Make a day ahead and store in the fridge over night for a richer flavor!
