Chocolate Chip Cookies

A modified recipe from my mom's original Betty Crocker cookbook! - submitted by Amanda Holman

Ingredients:
  • 3/4 cup sugar
  • 3/4 cup brown sugar
  • 3/4 cup coconut oil
  • 1 egg
  • 1 tsp. vanilla extract
  • 2 cups all purpose flour
  • 1 tsp. baking soda
  • 2 cups chocolate chips

 

Instructions:
  1. Preheat oven to 375°F.
  2. In a large bowl using a hand mixer, cream the sugar, brown sugar, and coconut oil together until light in color. 
  3. Add the egg and vanilla and mix until combined. 
  4. Slowly add in the flour and baking soda until fully incorporated. Be careful not to over mix. 
  5. Fold in the chocolate chips. 
  6. Roll the cookies into 1 inch balls and arrange 2 inches apart on a greased baking sheet. 
  7. Bake for 8-10 minutes and enjoy!
