A modified recipe from my mom's original Betty Crocker cookbook! - submitted by Amanda Holman
Ingredients:
- 3/4 cup sugar
 - 3/4 cup brown sugar
 - 3/4 cup coconut oil
 - 1 egg
 - 1 tsp. vanilla extract
 - 2 cups all purpose flour
 - 1 tsp. baking soda
 - 2 cups chocolate chips
 
Instructions:
- Preheat oven to 375°F.
 - In a large bowl using a hand mixer, cream the sugar, brown sugar, and coconut oil together until light in color.
 - Add the egg and vanilla and mix until combined.
 - Slowly add in the flour and baking soda until fully incorporated. Be careful not to over mix.
 - Fold in the chocolate chips.
 - Roll the cookies into 1 inch balls and arrange 2 inches apart on a greased baking sheet.
 - Bake for 8-10 minutes and enjoy!
