Ingredients:
- 6 cups veggies chopped up into similar sized, bite sized, pieces (root vegetables, broccoli, cauliflower)
- 1 tbs. dry white cooking wine
- 2 tbs.extra virgin olive oil
- Salt and pepper to taste
- Seasoning packet of your choice (Sazon by GOYA or Mrs. Dash).
Instructions:
- Preheat oven to 425°F.
- Line a roasting pan with tin foil or parchment paper.
- Place chopped veggies in a large bowl; toss with dry white cooking wine and extra virgin olive oil.
- Sprinkle seasoning packet and salt and pepper on veggies, then stir again.
- Pour veggies on the baking tray and roast in the oven for 30-40 minutes, stirring every ten minutes.
- Garnish with additional salt and freshly ground black pepper.
