Oven Roasted Vegetables

Ingredients:
  • 6 cups veggies chopped up into similar sized, bite sized, pieces (root vegetables, broccoli, cauliflower)
  • 1 tbs. dry white cooking wine 
  • 2 tbs.extra virgin olive oil
  • Salt and pepper to taste
  • Seasoning packet of your choice (Sazon by GOYA or Mrs. Dash).

 

Instructions:
  1. Preheat oven to 425°F. 
  2. Line a roasting pan with tin foil or parchment paper.
  3. Place chopped veggies in a large bowl; toss with dry white cooking wine and extra virgin olive oil. 
  4. Sprinkle seasoning packet and salt and pepper on veggies, then stir again.
  5. Pour veggies on the baking tray and roast in the oven for 30-40 minutes, stirring every ten minutes.
  6. Garnish with additional salt and freshly ground black pepper.
