Southwest Quinoa Salad

Ingredients:
  • 1 cup quinoa
  • 2 cups water
  • 1/2 tsp. salt
  • 1 cup black beans
  • 1 cup corn
  • 1 red pepper, diced
  • 2 tbsp. lime juice
  • 2 tbsp. finely chopped cilantro
  • 2 tsp. chili powder

 

Instructions:
  1. Add quinoa and water to a large pot on the stove. Bring to a boil over high heat, then decrease to medium low heat and simmer for 15 minutes, stirring occasionally.
  2. Remove from heat, giving quinoa a quick stir. Transfer to a large bowl and let cool for 30 minutes in the fridge.
  3. Mix in the remaining ingredients, combining well. 
  4. Serve and enjoy!
