Ingredients:
- 4 tbsp. butter
- 1 cup flour
- 1/4 tsp. cinnamon
- 3/4 tsp. salt
- 1/2 tsp. baking soda
- 3/4 cup brown sugar
- 1/2 cup white sugar
- 1/2 cup oil
- 1 egg + 1 egg yolk
- 1 tsp. vanilla
- 3 cups old fashioned oats
- 1/2 cup walnuts
- 1/2 cup raisins or craisins (optional)
Instructions:
- Preheat oven to 350°F.
- In small pan, brown butter. Pour in mixing bowl, add cinnamon. Mix.
- Add oil and sugars and mix well. Beat in egg and yolk, add vanilla.
- Mix flour, salt, baking soda together in a separate bowl. Add to butter, oil, egg mixture, Using a spoon, mix well.
- Add oatmeal and optional ingredients. Mix well, using a spoon.
- Mixture will be moist, but a bit crumbly. Use an ice cream scoop to measure out about 2 Tbsp cookie mixture. With dampened hands, press together into a ball, place on baking sheet lined with parchment paper. Flatten to 1/4 inch thickness.
- Bake for 10-15 minutes. Let cool on baking sheet approximately 5 minutes before transferring to cooling rack.
