Oatmeal Cookies

Ingredients:
  • 4 tbsp. butter
  • 1 cup flour
  • 1/4 tsp. cinnamon
  • 3/4 tsp. salt
  • 1/2 tsp. baking soda
  • 3/4 cup brown sugar
  • 1/2 cup white sugar
  • 1/2 cup oil
  • 1 egg + 1 egg yolk
  • 1 tsp. vanilla
  • 3 cups old fashioned oats
  • 1/2 cup walnuts
  • 1/2 cup raisins  or craisins (optional)

 

Instructions:
  1. Preheat oven to 350°F. 
  2. In small pan, brown butter. Pour in mixing bowl, add cinnamon. Mix. 
  3. Add oil and sugars and mix well. Beat in egg and yolk, add vanilla.
  4. Mix flour, salt, baking soda together in a separate bowl. Add to butter, oil, egg mixture, Using a spoon, mix well.
  5. Add oatmeal and optional ingredients. Mix well, using a spoon.
  6. Mixture will be moist, but a bit crumbly. Use an ice cream scoop to measure out about 2 Tbsp cookie mixture. With dampened hands, press together into a ball, place on baking sheet lined with parchment paper. Flatten to 1/4 inch thickness.
  7. Bake for 10-15 minutes. Let cool on baking sheet approximately 5 minutes before transferring to cooling rack.
