Breakfast Buffet in a Pan

Ingredients:
  • 10 eggs
  • 1/2 cup milk 
  • 16 oz refrigerated breakfast biscuits, uncooked
  • 2 cups shredded extra sharp cheddar cheese 
  • 1 bag of refrigerated breakfast potatoes
  • Salt and pepper
  • Optional: sautéed green peppers, onions
  • 5-6 slices cooked center cut bacon, chopped
  • 6 breakfast sausage links, cooked and chopped
  • 1 cup cooked diced ham

 

Instructions:
  1. Preheat oven to 350°F. 
  2. Spray 9x13 baking casserole dish with cooking spray
  3. Mix eggs and milk in a large bowl. 
  4. Cut each biscuit into fours and add it to the bowl. (Do this before cooking the meat so they can soak in the eggs). 
  5. Cook and break up/chop/cut your meat.
  6. Add meats, potatoes, and half of the cheese to the bowl.    
  7. Mix it all up and pour into pan. 
  8. Sprinkle rest of cheese to the top.
  9. Add a little salt and pepper, or red pepper flakes if you're feeling spicy!
  10. Bake for 30 minutes.


*Secret Tip: make this the night before, cover with plastic wrap, and leave in the fridge overnight. In the morning, stir it up then pour into sprayed baking dish and bake.
